Ingredients for Stuffed Bitter Gourd
long Bitter Gourd (karela) 600grams
Cooking Oil 04-Tablespoon
Turmeric Powder ½ Teaspoon
Coriander powder 02-teaspoon
Cumin seeds ½ Teaspoon
Red chili powder ½ Teaspoon
Fennel Powder 02-Teaspoon
Amchur Powder 01-Teaspoon
Salt According to your taste

Bharwan Karela Recipe Method
- Take the bitter gourd and wash it thoroughly using a strainer (preferably made of forged materials) under running water. Use a knife or peeler to remove the skin, and also take out the seeds.
- Sprinkle half a teaspoon of salt over the peelings and set them aside.
- Cut the bitter gourd (Karela) in half, ensuring that one end remains attached. If you prefer a less bitter taste, apply salt both inside and outside, and let it rest for half an hour.
- Rinse all the bitter gourd (Karela) thoroughly with water and squeeze it to remove all the salt; otherwise, it will become overly salty during cooking. Nowadays, bitter gourd tends to be less bitter.
- Next, wash the peelings well with water and squeeze them out.

Fried bitter gourd (Karela)
- In a pan, heat 1 tablespoon of oil, then add 1/2 teaspoon of cumin seeds and a pinch of asafetida to the hot oil. Once the cumin seeds begin to brown, incorporate turmeric powder, coriander powder, and fennel powder in the amounts specified above.
- To this fried spice mixture, add the bitter gourd peel, red chili powder, amchur powder, and salt to taste. Fry this mixture for 6-7 minutes, then remove it from the heat and set it aside. This will be the filling for the bitter gourd.
- Proceed to fill the prepared spice mixture into the bitter gourd by pressing it in. If desired, you can thread the bitter gourd to prevent the spice from spilling into the oil while frying. Fill all the bitter gourds in this manner.
- Heat a pan with 3 tablespoons of oil. Gradually add the stuffed bitter gourd to the oil. Cover the pan with a lid. Cook on medium heat for 6-7 minutes. Turn the bitter gourd occasionally to ensure even cooking. Fry it till its colour turns brown. The stuffed bitter gourds are now ready.
