Ingredients for Hariyali Gobi Recipe

Spinach Cauliflower curry recipe

Cauliflower                             02 cups (cut into pieces)
Potato                                      02 Medium size (Chopped)
Turmeric powder                    1/2 tsp
Garam masala powder           1/2 tsp
salt    

For Green Spinach Gravy

Spinach                                    250 grams
Tomato                                    02 Medium size (chopped finely)
Garlic                                      3, 4 cloves (grated)
Ginger                                     01 inch piece (grated)
Green chili                              2,3 (cut from the middle)
Cumin                                      01 tsp
Cinnamon                                01 inch piece (finely chopped)
Turmeric powder                    1/4 tsp,
Garam masala powder           01 tsp
Fresh cream                            02 tbsp
Butter                                      01 tbsp
Cumin powder                         01 tsp
Green coriander leaves           01 tbsp (for garnish)
salt                                           as per taste

Spinach curry

  • First of all wash and chop the spinach thoroughly.
  • Wash and chop the tomatoes finely, grate ginger and garlic and keep them aside. Cut the green chillies lengthwise in the middle and keep aside.
  • Put 2 tsp butter in a pan and heat it. When the butter melts, add cumin and grated garlic to it and fry a little.
  • Now add cinnamon, green chillies, finely chopped tomatoes, cumin powder, turmeric powder and garam masala to the pan and roast.
  • Add chopped spinach to it and fry for a few seconds.
  • Now put it in the cooker and add half a cup of water along with it and close the cooker and cook it. Don’t overcook it, 1 whistle is enough to cook the spinach.
  • Now take it off the flame and turn off the gas.
  • Pour water around the cooker so that it cools down quickly, and you can open the lid. If you release the pressure immediately, the green color of the spinach will remain intact, otherwise not.
  • Now let it cool down, then put the spinach mixture in a grinder and grind it finely. Put it in a pan and let it cook on a low flame.

  • In the meantime, put a tablespoon of oil in the pan and heat it, add chopped cabbage and potato pieces and fry it. Take out some cauliflower florets separately and keep them aside.

  • Sprinkle little water if needed and cover it and cook for about 5-6 minutes. Add the cooked cauliflower and potatoes to the spinach gravy and cook on medium heat.

  • After a little cooking add fresh cream and cook, it doesn’t need to cook much as both spinach and cauliflower potatoes are cooked. Now your green cabbage is ready, put it in a big bowl, garnish with some cauliflower pieces and green coriander and serve hot.
