Ingredients Required
Chana dal: 1 cup (split Bengal gram)
Lauki (bottle gourd): 1 cup (peeled and chopped)
Onion: 1 medium (finely chopped)
Tomato: 1 (chopped)
Green chilies: 2 (slit)
Ginger-garlic paste: 1 teaspoon
Turmeric powder: ½ teaspoon
Cumin seeds: 1 teaspoon
Coriander powder: 1 teaspoon
Red chili powder: ½ teaspoon
Salt: to taste
Cooking oil or ghee: 2 tablespoons
Fresh coriander leaves: for garnish
Onion: ½ ( cut into long, thin slices)

Preparation of Chana Dal
Chane ki dal takes time to cook, so wash them thoroughly and soak them in water for at least 30 minutes before cooking. Soaking them helps them cook faster and become more digestible. Remember to drain the water before cooking.
Cut half the onion into long, thin slices and fry till brown, then keep it aside.
Cooking Method
Heat cooking oil or ghee in a pressure cooker, add cumin seeds, and let them crackle. Add the chopped onions and fry until lightly golden. Add ginger-garlic paste and chopped green chillies and fry for about a minute, till the raw smell of the paste disappears. Then add chopped tomatoes and cook till they become soft.
After the tomatoes are cooked, add: ½ teaspoon turmeric powder, 1 teaspoon coriander powder, ½ teaspoon red chilli powder, and salt as per taste, and mix well.
Cook the mixture for a minute. Now add the soaked chana dal and chopped bottle gourd and mix everything gently.
Add about 2.5 cups of water, cover, and pressure cook over medium heat for 3-4 whistles. Now turn off the flame and let the pressure cooker cool down naturally.
Final Steps and Serving Method
Open the lid of the cooker and mash the lentils lightly until they are creamy. Add water as needed and cook on low heat for 5-7 minutes.
Garnish with fresh coriander leaves, browned onions, and serve hot with roti, chapati, paratha, or rice.
