Ingredients Veg Kurma Recipe

How to make Kurma paste

Fresh Coconut                         1/2 (finely chopped)
Poppy seeds (khus khus)         02 tsp
Cashew nuts raw                     8-10
Chana Dal                               0 1 tbsp (roast)
water                                       as required

Kurma curry

Bay leaf                                   0 2
Cloves                                      3, 4
 Green cardamom                  3, 4
Coriander powder                   02 tsp
Turmeric powder                    1/2 tsp
Red chili powder                     01 tsp
Garam masala                        1/2 tsp
Curd – 02 tbsp
Ginger-garlic paste                 01 tbsp
Cinnamon                                01 inch (chopped)
Mace                                       01
Onion                                      01 medium size (chopped)
Tomato                                    2,3 medium size (make puree)
Mustard oil                             02 tbsp
salt                                          as per taste
water                                       as required

Fresh vegetables

Cauliflower                              01 small size (cut into pieces)
Carrot                                      1/2 cup (grated)
French beans                           1/2 cup (cut into pieces)
Potato                                      01 cup (cut into small cubes)
Fresh green peas                     1/3 cup (you can also use frozen)
Green coriander                     1/4 cup (for garnishing)

How to make Vegetable Korma

Preparation

  • First of all wash and cut all the vegetables thoroughly, potatoes and carrots, also wash and chop them. Peel the green peas. Keep all the vegetables in a separate bowl.
  • Roast cashew nuts and keep aside.
  • Roast the chana dal (gram lentils ) and keep it in a bowl.
  • In the chutney pot of the grinder, coconut , poppy seeds, cashews and roasted chana dal (take care to roast the chana dal beforehand). add 1/4 cup water.
  • Add little water and grind all the ingredients together to make a smooth paste and keep it aside. You can add more water if required.

Veg Kurma Recipe

  • Now put a thick bottom pan on the flame, add oil to it and heat, keep the flame medium. When the oil becomes hot, add bay leaves, green cardamom, cloves, mace and cinnamon pieces.
  • Sauté these spices for some time, when the aroma does come.
  • Add chopped onions to it and fry till the onions become soft and translucent. There is no need to fry the onion much.
  • Now  add chopped tomatoes and teaspoon turmeric powder and mix well, fry till tomatoes turn soft.
  • Add the ground spice paste and stir well. Reduce the flame and roast the spices well, keep stirring in between.
  • After about 6,7 minutes of cooking, the masala will become shiny and the aroma will start coming.
  • Now add chopped vegetables and fry, add 2 tablespoons of curd (yogurt) to it and mix well.
  • Now add some water and salt as per taste and cover it with a lid.
  • Check by removing the lid, and give a good stir, check whether the vegetables are soft or not.
  • Now your veg kurma is ready, garnish it with chopped coriander leaves and serve hot with roti, paratha or naan.

Suggestion:

  • You can take vegetables of your choice in Veg Kurma recipe.
  • While making in pressure cooker, do not whistle too much otherwise all the vegetables will get mixed in the gravy.
  • You can also add a few drops of lemon juice to make it tasty while serving.
  • If time is short, you can also make it under pressure.
