Ingredients for Roasted Potatoes

Potato                                 10-12 (cut into large cubes)

Virgin olive oil                     1/2 cup

Garlic                                  5-6 (crushed)

Paprika                               01 tsp

Rosemary                            01 tbsp (chopped)

oregano                              01 tsp

Baking soda                        1/2 tsp

Salt                                      as per taste

water                                  as need

 Whipped feta

Feta                                     08 ounces (crumbled)

Cream Cheese                    1/4 cup

Lemon juice                        01 tsp

How to make potato roasted recipe

Step 1

Firstly pre-heat the oven to 450 degree. Peel the potatoes and cut them into big pieces, and keep them aside. Peel and crush the garlic cloves or chop them finely. Now put some olive oil in a pan and heat it, add chopped garlic and rosemary and fry till golden color. Pour it in a sieve so that the excess oil is separated, and keep aside.

Step 2

Now put 1 liter of water in a big pot and bring it to boil, for this increase the heat. Add 1 tsp salt and baking soda and potatoes and stir. Now lower the flame, cover the lid and cook it for 8-10 minutes, or (after some time, check the cookedness by pricking it with a light knife). Now put the potatoes in a sieve, so that the excess water is removed, let them rest for a while (about 2 minutes), this will evaporate its moisture.

Step 3

Now put oil in a pan and heat it, add salt as per taste, Paprika-01 tsp, and toss 3, 4 times or (let the potato pieces get coated well with the oil) after a little cooking, the edges of the surface Rough and crooked will appear.

Step 4

Now cover this potato with parchment paper and transfer it to a pan. Do not crowd the potato pieces, shift it to the oven, and roast it. Stir it a couple of times and fry the potatoes till they turn brown in colour. Check that it is not fried well on all sides. It takes around 30- 35 minutes.

Step 5

Take the cooked potatoes out of the oven and transfer to a large bowl, add the sautéed garlic, rosemary sprigs and oregano, and serve hot.

You can also serve potato wedges with whipped feta.

Put all the whipped feta ingredients in a mixer grinder jar and blend until smooth. When the mixture is mixed well, take it out in a separate bowl and keep it aside.
