Ingredients for kathal ki sabji

Jackfruit (Kathal), raw                        500 grams (peeled and cut into 1 1/2 inch cubes)

Tomato (2 medium sizes)                   150 grams (finely chopped)

Cumin                                                       3/4 tsp

Coriander Powder                               01 tsp

Turmeric Powder                                 01 tsp

Red chili powder                                  01 tsp

Asafoetida powder                             01 pinch

Green chilies                                          3-4 (chopped)

Salt                                                            to taste

Amchur (dried mango powder)     1/2 tsp

Garam Masala Powder                      01 tsp

Curd                                                          100 ml (whisper well)

Green Coriander                                  01 tbsp (for garnishing)

How to make kathal ki sabji

Step-01:

Fry the Jackfruit

First of all, cut the jackfruit into cubes of about 1 1/2, before cutting, apply oil to your hands. Now put a heavy-bottomed pan on the gas, add 1 cup of oil, and heat it. When the oil becomes hot, add jackfruit cubes and fry them. Fry the jackfruit till golden brown on both sides. Remove the pieces from the oil with the help of a slotted spoon and spread them on paper napkins, this will remove the excess oil.

How to Make Masala

Reheat the pan, if oil is useful then add more pulses. When the oil becomes hot, reduce the gas to medium, now add whole cumin seeds, chopped green chilies, and a pinch of asafoetida, and stir well. Now add turmeric powder, coriander powder, and red chili powder to it and stir well.

Add chopped tomatoes to the pan and fry, add salt as per taste and fry for about 5-6 minutes or till the spices start leaving oil on the sides.

How to Cook Jackfruit

  • When the masala is fried well, then add the fried jackfruit cubes to it and fry for about two minutes. When jackfruit is mixed well in the spice, add about 250 ml of lukewarm water to this mixture, and stir well.
  • Now cover it with a lid and cook for about 20-25 minutes, during this turn the flame to medium. Remove the lid from time to time and stir it a couple of times.
  • Add garam masala powder and amchur to this mixture and stir.

  • After cooking for some time, add chopped coriander leaves and mix well. Now remove it from the flame and serve it hot with Roti, naan, paratha, or rice.
