Ingredients

1 cup fresh or frozen corn kernels

1/2 cup all-purpose flour

Baking powder1/2 teaspoon

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

Milk /4 cup

1 large egg

2 tablespoons chopped fresh cilantro or parsley (optional)

Vegetable oil, for frying

Recipe method

  • In a mixing bowl, combine the flour, baking powder, salt, black pepper, and paprika (if using). Mix well.
  • Take a separate bowl, add eggs and milk to it, and whisk well.
  • Add the egg and milk mixture to the dry ingredients and stir until you have a smooth batter.
  • Add the corn kernels and chopped cilantro or parsley (if using) to the batter and mix until they are evenly distributed.
  • Pour vegetable oil into a skillet and heat over medium heat. You’ll need enough oil to submerge the fritters about halfway.
  • Once the oil is hot, drop spoonfuls of the batter into the pan, making sure to leave space between each fritter.
  • Fry the pakoras for 2-3 minutes or till they turn golden brown in color, then turn them to cook on all sides.
  • Flip them carefully using a spatula.
  • Once the fritters are cooked, remove them from the pan and place them on a paper towel-lined plate to drain excess oil.
  • Repeat the frying process till all the batter is used up.
