Ingredients for Mixed Vegetable

Cauliflower                         1/2 cup (chopped)

Carrot                                   2 big size (chopped)

French Beans                     1/4 cup (chopped)

Potato                                  1/2 cup (chopped)

 Capsicum                            1/2 cup (chopped)

Green peas                        1/4 cup (peeled)

Onion                                    0 1 medium size

 Tomato                               2,3 (chopped)

Green chili                          2,3 (chopped)

Garlic cloves                        5,6

Ginger piece                      01 inch

Cream                                   02 tbsp

cashew nuts                       8-10 (roast and grind)

Dry Spices :

 Cumin                                  01 tsp

 Turmeric Powder            01 tsp

 Red chili powder              01 tsp

Coriander Powder           01 tsp

Sabzi Masala                      01 tsp

salt                                         as per taste

 Green Coriander             1/2 cup chopped for garnishing

Mixed Vegetable Recipe

Fry all vegetables

  • First of all wash and cut all the vegetables thoroughly.
  • Now heat oil in a pan, when the oil is hot, add chopped potatoes, chopped carrots and fry for a while. Fry it till the potatoes turn light brown on the sides and become crisp.
  • Now add the remaining chopped vegetables, cauliflower and French beans and cook for about two minutes.
  • Also add capsicum and green peas to it, they have been added last because it takes less time to cook.
  • Mix all the vegetables well and cook them till about 70% roasted, on cooking too much, all the vegetables will get mixed and kneaded. When the vegetables are 70% cooked, take it out from the pan and keep it aside.

How to make curry

  • In another deep frying pan, add oil, when the oil is hot, add cumin seeds, and when the cumin starts to splutter, now add chopped onion, green chili and ginger, garlic paste, mix it well.
  •  Cook the onion till it turns light brown, then add chopped tomatoes.
  • Cook it till it becomes soft.
  • Now add roasted cashew nuts to it, add 2 spoons tomato puree or sauce and mix it well.
  • Add turmeric powder, red chili powder, and coriander powder to it and stir well.
  • Add garam masala and salt as per taste.
  • Now fry the gravy well, fry it till oil appears on the sides.
  • Add cream according to the quantity mentioned above.
  • Now add a cup or so of water as required, and stir well.
  • Now add fried vegetables to this gravy and mix well and cook for a while. Cook it by covering it with a lid. Let it cook for about 4.5 minutes.
  •  Now your mixed veg is ready, garnish with chopped coriander leaves and serve hot. you can serve this recipe with jeera rice, roti, poori, naan or paratha.

  • We have made the gravy very thick, you can keep the gravy thin if you want.
