Tofu Scramble

Ingredients for Tofu Scramble

Firm tofu                                 250 grams

Onion                                      01 medium size (finely chopped)

Tomato                                    02 (chopped)

Garlic                                      2,3 cloves (crushed)

Ginger                                     01 inch piece (grated)

Turmeric                                 ½ tsp

Cumin                                      01 tsp (ground)

paprika                                    ½ tsp

Parsley                                    1/2 (finely chopped)

Step 01

First of all, wash the tofu well and keep it in a bowl, now mash it thickly using a fork, keeping some of its pieces big. Keep it aside.

Step 02

Heat oil in a pan, and keep the flame medium. Add chopped onions to it and fry for about 8-10 minutes or till they turn golden brown.
Now add crushed garlic, ginger(grated), turmeric, cumin, and paprika to it and stir, frying it a little.

Step-03

Add tomatoes to it and fry till slightly soft. Now put mashed tofu in the pan and fry for about 2-3 minutes. Increase the flame at this time.
Add herb parsley to this mixture. Take it off the heat, now your Tofu Scramble is ready, serve it with plain bread or bread toast.

Suggestion

After washing the tofu, drain the excess liquid through a sieve, do not try to squeeze or press it, it evaporates automatically during cooking. ,
While making crumbs you can remove all lumps, and use a grinder or masher to crush them into small pieces.
We have used desi tomato in our recipe, its taste is slightly sour, you can also use other tomatoes.
