Ingredients Hare Pyaz Ki Sabji recipe

Potato and Spring Onion Recipe

Green onions                           250 grams (chop finely with leaves)
Potato                                      03 (medium size)
Onion red                                01 small size (chopped)
Green chili                              03 (chopped)
Garlic                                      04 cloves (crushed)
Ginger                                     01 inch piece (grated)
Turmeric                                 01 tsp.
Mustard oil                             02 tbsp
Cumin                                      01 tsp.
Red chili powder                     02 tsp
Coriander powder                   01 tsp
Garam masala                        1/2 tsp
Salt                                          as per taste
Green coriander                     1/4 cup (for garnish)

Spring onion recipe method

Step 01

Preparation

Hare Pyaz Ki Sabji
  • First wash the potatoes and cut them into medium sized pieces and keep them aside. Wash and finely chop the spring onions in a large bowl and keep aside. Cut red onion and green chillies and keep ready.
  • Grate ginger and crush garlic and keep aside.
  • Take out all the spices separately in a plate.

Step 02

Fry the Potatoes:

  • Now put a pan on the flame, add 02 table spoon mustard oil and heat it, when the oil becomes hot then add cumin seeds. When the cumin starts crackling, add chopped onion and each chili and cook it.
  • After a little cooking, add ginger garlic paste and fry it well. Add red chili powder, turmeric powder, coriander powder, and salt as per taste and fry well.

  • After roasting a little, add chopped tomatoes and cook a little, now add potatoes and mix well.
  • Cover it with a lid, stir it once or twice in between, in about 5 minutes the potato becomes soft and gets mixed with tomatoes and spices.

*Keep the flame low while cooking potatoes.

Step 03

Add Spring Onions:

  • Now add chopped green onions to it, and mix. Cover the lid, and cook for about 4 to 5 minutes.
  • Green onions release water, open the lid once to see the amount of water, if it is more then cook a little more.
  • Your Hare Pyaz Ki Sabji  (spring onion recipe) is ready, garnish it with coriander leaves and serve hot. You can serve it with dinner or lunch.

Suggestion

Put the potatoes in water after cutting them, otherwise the potatoes turn black.
Each onion and tomato are sufficient to cook both the vegetables, so no water is required. If the flame is high then add some water.
